(1) The correct order of addition When multiple flavors are mixed and used, the flavor with a lighter fragrance should be added first, and then the flavor with a stronger fragrance should be added.

(2) Select the appropriate time for adding as much as possible during cooling after heating or at the later stage of processing. The food after adding the flavor should not be exposed to the air for a long time to avoid the volatilization loss of the flavor.

(3) Avoid chemical reactions The fragrances and diluents in the essence are easily oxidized and deteriorated when exposed to air. If microcapsules are used, the oxidation of fragrances can be avoided as much as possible. Flavor is unstable in alkaline food, such as vanillin and sodium bicarbonate will lose its flavor and its color will become reddish brown.

(4) Mastering the appropriate amount of addition requires accurate weighing. Liquid flavors are accurately weighed by gravimetric method. When using, the essence should be distributed evenly in the food as much as possible.
